Salsa Verde

What you'll need
- 150g capers
- 1 small bunch fresh coriander
- 1 clove garlic
- Juice of 1 lemon
- Extra Virgin Olive Oil
Sweet garden mint to grace great British lamb – the finest for the finest.
Method
1. Drain the capers and blend in a food processer with the other ingredients except the Olive Oil.
2. Slowly pour in enough Olive Oil to form a smooth paste.
3. Season with a little black pepper and serve immediately with roast lamb.
