Here’s a simple something to tickle the special taste buds. Toast a slice or two of ciabatta bread, spread our Fig Relish on it, topped with creamy goats cheese before grilling.

The relish is brimming with dried figs (60%) and made with cider vinegar and molasses, beautifully complementing the grilled soft cheese.

Another sensational morning dish is Shakshuka from North Africa / Middle East. Gently spiced sliced onions, garlic, peppers and tomatoes simmering with eggs poaching in the rich sauce.

Chef, Andy has a lovely version of this Persian beauty, which turns it into a Bloody Mary influenced baked eggs dish – deliciously – HERE.

Keep it simple

Steak & Caesar Salad

A quick, slightly clever combination. Basically brush a couple of steaks with Stokes Original BBQ Sauce. This will give it a sweet, smoky finish. Cook them, rest them and slice them into juicy strips.

For the salad, wash and arrange Romaine lettuce leaves with a combination (pre-mixed in a bowl) of Parmasan, croutons, anchovies and Stokes creamy Caesar Dressing spread on top.

You can eat this in front of a film using the lettuce as a Caesar Boat, topped with a slice or three of sweet, smoky steak.

BBQ Heads Up

 

The BBQ season is just around the corner, so we thought a heads up would be in order.You may be dusting off your old faithful or unpacking a new BBQ, eager to get ready for the season ahead.

These few tips might help.

Season your grill.

New grills will have been coated in chemicals to protect them post manufacture. Old faithfuls will have been lurking away since last year.

  1. Remove the grill grates and then use soapy hot water to wash the inside of the BBQ. Give it a good clean outside as well.
  2. Give the grill a good wash (if new) or scrape with a wire brush.
  3. Now, either turn on the gas or fire up the coals for the heat to finish the cleaning process.

You’re seasoned and ready to go.

Your Tools.Wherever they ended up at the end of last year, dig them out and give them a  good cleaning too. To be absolutely sure (new or old) give them a soak in some Milton for half an hour before a soapy wash.

Flavour.

Keep a separate store cupboard for your BBQ Sauces, relishes, seasoning and other condiments. This way, you know you’ll have everything you need.Try this BBQ Starter Pack from Stokes.
