Smoked Salmon Brunch Bagel

What you'll need
- 1 large bagel
- 2 tbsp cream cheese
- 1 tbsp Stokes Sicilian Lemon Mayonnaise
- A generous helping of smoked salmon slices
- ¼ red onion, thinly sliced
- A handful of salad leaves (watercress and rocket work particularly well)
Method

- Halve the bagel horizontally.
- Mix the cream cheese and lemony Mayonnaise together, then spread on both soft sides of the bagel.
- Lay the red onion slices on to the bottom half of the bagel, then top with the smoked salmon and a good grind of black pepper.
- Heap the salad leaves on the salmon, then replace the top half.
