Unpretentious, uncomplicated, simplicity but, really, truly, so very tasty. As this is really the last week before things start to get crazy with Yuletide Yummies, we thought we’d dumb everything down, except for the taste of Stokes. That is utterly without compromise as you’ll see.

Chips 'n' Dips

 

Crisps, chips, fries ?????

Confused, you bet. In the United States, the term ‘chips’ is used to describe thin, salty, brittle slices of fried potato, while the term ‘fries’ is used to describe thin fried potato chunks or stick – that we call ‘chips’, and the former – crisps!!!

We’ve been eating chips since mid-18th C. The Americans were introduced to fried potato pieces in WW1 in North Western Europe where the Belgians, speaking French, called them frites / hence fries.Chips / Fries generally match with Ketchup or Mayo, or in Germany both – der rot und weiss bitter.

Of course, we would say it wouldn’t we, our REAL Tomato Ketchup and our REAL Mayonnaise will make your chips, fries, wedges, crisps – even your fingers … taste so much better.

That’s – Taste without compromise.Many of our sauces are dips in themselves, few more, and deliciously so, than Bloody Mary Ketchup offering all the best qualities of our fine Tomato Ketchup, but with a real shot of vodka and Bloody Mary spices to give it a new dimension.With a little foodie knowledge – or just ‘give-it-a-go’ attitude – you can mix and match our sauces to create your own twists, tastes and textures. This is our Cocktail Sauce, straight from the jar, but a fantastic twist on this already exquisite dip is to mix REAL Mayonnaise with Bloody Mary Ketchup  – perfect for that morning after sandwich and a few chips.Let your hair down with this awesome trio.

Left, is a combo using Chipotle Ketchup and Garlic Mayonnaise, letting the smoky chipotle chillis and velvet smooth aioli-styled mayonnaise bring heat and depth to the dip.

Centre, is another combo using majority Habanero Chilli Mayonnaise with a little Sicilian Lemon & Dill Mayo stirred through it to give tangy Sicilian relief to the Mexican chilli heat.

Right, is straight forward Chilli Ketchup for those who simply want to shake, dip, hmmm, and go.

One of these in just 20 minutes?

Crispy Jackets in JUST 20 minutes. Like them fluffy in the middle with crispy skins?

Yes please. We do.

  1. Puncture the skin several times with a fork,
  2. then into the microwave for 10 minutes. Check that the centre is softening by inserting a sharp knife. A big potato may need a couple more minutes.
  3. With a sharp knife, score a cross in the top.
  4. Now, into a pre-heated Air Fryer at 190 for 10 minutes. Plus 2 for much larger potatoes.
  5. Fluffy with a crispy jacket.

Taste Without Compromise

REAL Tomato Ketchup

DID YOU KNOW: Tomatoes originated in the wild in the Peru-Ecuador-Bolivia area of the Andes. Italians first grew the tomato in about 1550 and apparently were the first Europeans to eat it.

About 25 years later it was grown in English, Spanish, and mid-European gardens as a curiosity, with little or no interest in it then as food.

The French gave it the name pomme d’amour – the love apple.Well, we certainly love them.

Rick (MD and self-proclaimed ‘chupaholic’) and the team discovered that the best tasting tomatoes are treated to hours and hours of Mediterranean sunshine. The beautiful plump, sweet fruit ripen naturally until they’re ready to pick.

They were and are a bit more expensive than some other sources, but our mantra is always to be “Best in Class” – no compromise.  

With the ‘quality’ box ticked, we decided to up the volume from lots, to ‘lots & lots & lots‘, simmering a massive 200g of those juicy tomatoes, reduced into every 100g of ketchup to make Stokes Tomato Ketchup.

Meet the FamilySavour the rich, natural taste of tomatoes, then feel the heat of the spices kicking in from our Chilli Ketchup.For smoky background notes and another warming finish, our Chipotle Ketchup uses Chipotle Chillies, which are Jalapenos left to ripen on the plant to a deep red, before being smoked, giving them, and so our ketchup, this distinctive flavour.

Stokes Bloody Mary Ketchup is pure beauty in a bottle, adding a shot of vodka and a unique blend of Bloody Mary spices, perfect for that ‘morning after’ bacon sandwich.Try mixing it with our Real Mayonnaise for a Bloody Mary Rose Sauce to give prawn cocktails a real treat.

I planted my tomato plants too late this year. Now they’re playing ketchup.

I used to buy another tomato ketchup until I discovered Stokes. In Heinz-sight, I wish I’d changed sooner.

Q: What did the tomato say to the visiting Romaine? A: Lettuce be friends.

Q: Why does Santa like to grow tomatoes? A: Because he like to hoe, hoe, hoe!

Q: Why did the tomato go out with a prune? A: Because he couldn’t find a date!

Q: What does potatoes and tomatoes have in common? A:Toes’.

 

Best away now, before Rick realises he’s one tomato short. It’s enough to make me blush.
