Smoking Bishop

What you'll need
- 3 tsp of Stokes Chilli Jam
- 750 ml ruby port
- 750 ml red wine
- 175 ml water
- 180g Brown Sugar
- 1/4 tsp grated fresh ginger
- 1/4 tsp ground allspice
- 1/4 tsp grated nutmeg
- 4 large Seville oranges
- a handful of whole cloves
By adding Chilli Jam to the wintery flavours and heat of this warm punch, you take its heat deeper to your core.
Method
- Preheat oven to 180 C.
- Wash and dry oranges.
- Pierce and stud each orange with five cloves.
- Place oranges in a baking dish and roast until lightly browned all over for 60-90 minutes.
- Add port, wine, water, sugar Chilli Jam and spices to a saucepan, and simmer over low heat.
- Slice oranges in half and squeeze juice into the wine and port mixture.
- Taste and adjust with more sugar or Chilli Jam as appropriate.
