  • 3 tsp of Stokes Chilli Jam
  • 750 ml ruby port
  • 750 ml red wine
  • 175 ml water
  • 180g Brown Sugar
  • 1/4 tsp grated fresh ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp grated nutmeg
  • 4 large Seville oranges
  • a handful of whole cloves

By adding Chilli Jam to the wintery flavours and heat of this warm punch, you take its heat deeper to your core.

Method

  1. Preheat oven to 180 C.
  2. Wash and dry oranges.
  3. Pierce and stud each orange with five cloves.
  4. Place oranges in a baking dish and roast until lightly browned all over for 60-90 minutes.
  5. Add port, wine, water, sugar Chilli Jam and spices to a saucepan, and simmer over low heat.
  6. Slice oranges in half and squeeze juice into the wine and port mixture.
  7. Taste and adjust with more sugar or Chilli Jam as appropriate.
