Salsa dancing on my taste buds 💃🌶️. Every bite sparks a fiesta in my mouth that I never want to end.

If you don’t know it, Mexican food is a vibrant celebration of simple ingredients, wrapped and stacked for delicious pleasure.

To love Mexican food, you have to love:

  • Chilli, from refreshing tang to the searing heat.
  • Avocado, smashed with garlic, or blended to sensational guacamole.
  • Salsa, an enthusiastic chopped combo of peppers, onion, tomatoes, chilli and coriander.
  • Ground and marinated meat – chicken, pork, beef.
  • Beans – all manner of healthy pulses, and …
  • Tequila !!!

In Rick Stein’s wonderful series – Road to Mexico, the climax is set in Hussongs Bar, the oldest and best-known cantina in Baja California, where Rick enjoys a classic Margarita cocktail – traditionally made with Tequila, lime juice and Cointreau.

  • 120ml Tequila
  • 60ml triple sec – Cointreau
  • 90ml fresh lime juice
  • crushed sea salt

Take 2 chilled martini glasses, rub a lime wedge round the rims, turn them upside down to rub the rims in crushed salt. Pour the liquid ingredients with ice into a cocktail shake. Dance a decent samba. Pour and serve with a slice of lime!You can put anything in a Taco. Just think of it as an open wrap. Here, chicken slices have been marinated in Stokes sweet garden Mint Sauce and olive oil, grilled on a skewer, and served with crunchy red onion, radish, spring onion, lime and coriander.On the side there’ll be a spicy salsa – chop the ingredients mentioned above, stir them in our Burger Relish and add Habanero Hot Sauce and lime juice to taste. Add the hot sauce gradually – it really is quite hot.

If you are not a fan of sour cream, you’re not alone. So, try our Garlic Mayonnaise instead, and enjoy this velvet smooth aioli-style sauce. Yummy.Taco sauce has a similar taste profile to enchilada sauces. Like enchilada sauce, it’s made with tomatoes, garlic, chillies, and various other spices and aromatics.

Make your own Taco Sauce:

Put all the ingredients (except the last hot sauce) in a pan, boil then simmer to reduce for 10 to 15 minutes. As it simmers, gently add the Habanero Hot Sauce to taste. Cool, chill and keep in the fridge for up to five days – if it lasts that long.Simple Beef Taco Soup RecipeHERE.

Start the day in a special way, with toast, smashed avocado, salmon and an egg. What’s so special – the Mustard & Dill Sauce that’s been stirred into the crushed avocado adding tangy aromatics that go so, so well with salmon, smoked or otherwise.It also adds so much to the warm potato salad accompanying the grilled Mackerel here.Coronation Sauce – the sauce of Kings and Queens – was created for the Coronation of Queen Elizabeth II. Our recipe follows the original very closely, adding just one or two tasty ‘Stokensian’ twists. Simply spooned with leftover chicken, it creates a delicious Coronation Chicken in the blink of a regal eye.Our Sweet Chilli Sauce adds some dazzling flavours of the Orient with lots of red peppers and celebrational sparkles of chilli. It takes a stir fry from ‘ok’, to ‘WOW’, in a shake or two. But its versatility lifts anything it touches, like the crispy cod goujons here.Another oriental favourite is our Hoisin Sauce.
