Cauliflower Cheese Fritter

What you'll need
Another tasty Air Fryer contribution from our friend Emily @whatiateforbreakfast. She says: These low-carb cauliflower fritters are seriously yummy and only contain 3 ingredients (plus herbs & seasonings) 😍. You know I love a fritter for breakfast, although they’d be great for brunch, lunch & dinner too!
Method
The fritters can be cooked in the air fryer, oven or pan fried, so there’s no excuse not to try them 😉.
Recipe (serves 1):
🧀 Add 100g @fullgreen.official riced cauliflower to a large bowl with 30g grated cheese of your choice (I used extra mature cheddar). Give it a stir.
🧀 Crack in 1 large egg, then add a pinch each of salt & pepper, plus any other herbs/seasonings of your choice – I added 1/2 tsp each @stokes_sauces English mustard, parsley, garlic granules & 1/4 tsp chilli powder. Mix until combined.
🧀 Tip: if the mixture is too wet, you could stir in 1/2 tbsp flour (either plain flour or almond flour if you want to keep it low carb).
🧀 Spoon the mixture into 4 rounds in an air fryer basket lined with baking paper, then spritz with a small amount of oil/spray.
🧀 Air fry at 180C for 12 mins, then carefully flip and cook for a further 3 mins.
🧀 If you don’t have an air fryer, you can oven bake the fritters at 180C fan/200C for 20 mins (turn after 15 mins) *OR* fry them in a large, non-stick frying pan with a glug of oil for 4-5 mins on each side.
🧀 Serve & enjoy! They are delicious on their own or served as a side.
