It makes the lamb the true star of the table, using the juices in the roasting tray to enhance the freshness of the veg.While the meat rests, use the oven heat to finish off your favourite trimmings, such as the all-important roasties, here dusted with a little flour and a coating of our Cider & Horseradish Mustard.

Wine of the Month - Review.

 

Matsu Red Wines.

Matsu translates from Japanese as ‘to wait’.

It perfectly captures the patient philosophy of the winery and their Toro vineyards. Here, mature vines nourish the tastiest grapes, creating wines with diverse flavour profiles.

And you’ll taste the benefits of old vines, which nourish the tastiest grapes, in each sip.

There three wines in the collection:Bodega Matsu ‘El Picaro’ 2022/23, Toro

El Picaro translates as ‘the rogue’, which perfectly sums up this vibrant, charming wine. With just two months ageing in concrete vats, you can taste its youthful freshness – there’s notes of juicy blackberry and blueberry, liquorice and sweet spice. The perfect choice for cuts of roast beef. (14.5% abv).

Bodega Matsu ‘El Recio’ 2022/23, Toro

‘El Recio’ is made from Tempranillo vines between 90 and 100 years old. So expect heady notes of black fruit, chocolate and vanilla, a full body and a fruity, lingering finish. Enjoy it with juicy lamb shanks. (14.5% abv).

Bodega Matsu ‘El Viejo’ 2020/21, Toro

The star of the show with intense, seductive fragrances accompanied by delicious notes of sweet spices that add complexity. It is a mature, voluptuous red and a great expression of the old Toro vineyards. (15% abv).
